This is a stainless steel Deba knife made in Seki City, Gifu Prefecture, one of Japan's leading cutlery production areas. It was manufactured by Masahiro, a trusted and well-established knife company based in Seki City, Gifu Prefecture.
This knife was sharpened by the previous owner, not by me. Japanese single-bevel knives are generally finished with a two-step edge by adding a micro bevel (a very small secondary bevel at the edge). This knife has a two-step edge with a relatively large micro bevel. Personally, I find this micro bevel a bit too large, but a larger micro bevel makes the blade less prone to chipping. Therefore, this knife can be a good option for someone who wants a Deba that is ready to cut upon arrival and also emphasizes chip resistance.
On the right side of the blade, there is an engraving in Japanese that means “Registered Trademark Masahiro.”
Masahiro knives are sometimes sold at unbelievably low prices due to price wars between unauthorized resellers. In reality, they are not that cheap. Please also be careful of counterfeits if you are purchasing a new one.
