This is a very old stainless steel Santoku knife. On the left side of the blade, the name “Azuma Masamune” is engraved, but since Azuma Masamune went out of business several decades ago, both information about them and details of the steel used for this knife are unknown.
The knife has been sharpened with a whetstone and is already in a good cutting condition. From how it feels in hand and during sharpening, my impression is that it is a stainless steel knife that is neither high-end nor low-quality.
