This is a Santoku knife made in Kochi Prefecture (Tosa region), one of Japan’s leading cutlery production areas. The core is Blue #1 carbon steel, and the sides are soft iron, so the whole knife is prone to rust.
This knife comes with one spare handle.
There are seven Japanese characters engraved on the right side of the blade. They mean “Tosa,” “Tadayoshi-saku,” and “Blue #1.”
The sticker on the ferrule reads “Blue carbon steel, traditional craftsmanship,” and the sticker on the handle reads “Tosa, hand-forged, Tadayoshi.”
・What is Kurouchi?
Kurouchi is the name of the manufacturing process. While ordinary kitchen knives are polished to a beautiful silver color, Kurouchi is a process that leaves the surface blackened during manufacturing without polishing it. There is no difference in sharpness, but it is less noticeable when it rusts. Scratches are also less noticeable. Even if they do get scratches, I find them cool.
・What is Tosa Tadayoshi?
They are a family-run company in the Tosa region that has been engaged in knife making for generations. Currently, five people are involved in both production and management.
