・About this item

This is a three-layer Nakiri knife made in the Banshu area, one of Japan's leading cutlery production areas. The core is carbon steel, and the sides are stainless steel. The blade has been sharpened with a whetstone and cuts well. Please note that the edge area is prone to rust.

The carbon steel used in this knife is either SK or White #2. Until around 3–4 years ago, White #2 was used for this model, but it was recently changed to SK. Since the exact production date is unknown, I cannot say which one was used for this knife.

There are multiple scratch-like marks on the sides of the blade, and the blade is slightly bent. However, there is very little wear on the edge. When this knife arrived at my place, it was packed very poorly, so it’s possible that the damage occurred during shipping.

The side of the blade is engraved with “Warikomi construction: carbon steel core sandwiched by stainless steel.”

・What is Banshu Miki?

The company that manufactured this knife is called "Mikihamonoseisakusho" in Japanese. They are a knife manufacturing and sales company established in 1937. While they are not widely known, either in Japan or internationally, their knives receive high praise from users. I have sold several used knives made by this company, and all of them have been of excellent quality.

Please note that the blade edge and the area around it are prone to rust. Be sure to wipe them dry after each use, as they will rust quickly if left wet.
