This is a Santoku knife from Nihonbashi Kiya, a prestigious cutlery store in Tokyo. This is not a current model, but likely one from 10 to 20 years ago.
This knife has a mono-steel blade with an easy-to-manage HRC. Maintenance can be done with a simple sharpener, but if you use a whetstone, it is relatively easy to customize—not only maintaining a symmetrical double bevel, but also adjusting it slightly toward a single-bevel edge if desired. Even beginners can sharpen it easily with a whetstone.
I lowered the condition rating and price due to a gap in the handle, but the blade has been sharpened with a whetstone and is in excellent cutting condition.
・What is Nihonbashi Kiya?
Nihonbashi Kiya was founded as a cutlery store in 1792. As far as I know, they do not manufacture their own products, but rather source high-quality knives from all over Japan and sell them under their name. Although their products are high-priced, the quality is excellent. That’s why they have long been known as a prestigious brand representing Tokyo, the capital of Japan, from their founding to the present day.
