This is a Small Santoku knife from Nihonbashi Kiya, a prestigious cutlery store in Tokyo. This is not a current model, but likely one from 10 to 20 years ago.

This knife has a mono-steel blade with an easy-to-manage HRC. Maintenance can be done with a simple sharpener, but if you use a whetstone, it is relatively easy to customize—not only maintaining a symmetrical double bevel, but also adjusting it slightly toward a single-bevel edge if desired. Even beginners can sharpen it easily with a whetstone.

The previous owner polished the surface of the blade using a power tool. Polishing a blade with a power tool can sometimes significantly reduce its performance due to heat buildup, but this knife has retained its performance without any issues.

・What is Nihonbashi Kiya?

Nihonbashi Kiya was founded as a cutlery store in 1792. As far as I know, they do not manufacture their own products, but rather source high-quality knives from all over Japan and sell them under their name. Although their products are high-priced, the quality is excellent. That’s why they have long been known as a prestigious brand representing Tokyo, the capital of Japan, from their founding to the present day.
