This is a carbon steel Yanagiba knife made in Hakata City, Fukuoka Prefecture—one of Japan’s lesser-known but respected knife-making regions.
The manufacturer has not disclosed which of the two is used. In Japan, it’s not unusual for makers—not just this one—to withhold the exact name of the steel. This reflects the craftsmen’s desire for their knives to be evaluated not only by the materials used but also by their skill and technique.
Personally, I feel that it might be White #2, but there’s a chance it could be something else.
The right side of the blade is engraved with the Japanese characters “Kura Ichimonji Genuine Forged.” Incidentally, knives made by makers or brands with the name "Ichimonji" are generally high-priced.
・What is Hakata Kura Ichimonji?
They were established in 1930 in Hakata City, Fukuoka Prefecture, which is famous for its tonkotsu ramen. In addition to kitchen knives, they also produce scissors and carpentry tools, supporting the local industry in Hakata.
